Mint Chocolate Protein Cake!

Ahhh, back to the roots. Long ago I use to bake a protein cake almost every single day.
@thephysiquemechanic and I were talking and decided I would start throwing some recipes and content in his weekly newsletter, so here we are. .

@muscletech Chocolate Mint Andes Cake w/ @eatenlightened mint ice cream, @waldenfarmsinternational choc syrup, cool whip, and a few more Andes pieces. Who says healthy can’t be pretty! Presentation is everything! .

Cals: 350

Fat: 11.6

Carbs: 45.9

Ingredients:

1/2 Scoops Mint Chocolate Protein(I used MuscleTech’s)

16g Coconut Flour

10g All Purpose Flour

10g Truvia(or granulated sweetner of choice)

5g Cocoa Powder

70g Greek Yogurt(I used Whole Milk Plain)

60g Unsweetened Applesauce

7g lite butter

1/2 tsp vanilla extract

1/2 tsp salt

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp mint extract

Unsweetened almond milk or other liquid to bring together if needed

10-20g depending // Andes Mint candy pieces or other choc/mix-ins “optional”

Walden Farms Chocolate Sauce “optional”

Instructions:

Kept this very basic and extremely quick to do as I didn’t have loads of time preparing this. I made this directly for the busy health minded dessert lover.

  1. Preheat oven to 325 degrees
  2. Prepare your baking dish. I used a 6 inch ramekin but you could use anything you have handy.
  3. In one bowl sift together your dry ingredients(cocoa, flours, baking soda, baking powder, and salt). Then mix in your add ins.
  4. In another bowl add your butter and sugar and mix. Then add in all the rest of your wet ingredients( yogurt, vanilla, applesauce, milk)
  5.  Pour your wet mix into your dry bowl and combine well.
  6. Pour your batter into your baking dish and place in the middle of oven.
  7. Bake for roughly 25-30 min. Bake time will vary depending on baking dish/protein/etc
  8. Use the toothpick test to check if cooked all the way through. Once done, remove and place on a cooling rack.
  9. Once cool, pop out of the baking dish and place onto the rack to finish cooling.
  10. Once cool, decorate however you want, slice it up and share, or wrap and freeze it to enjoy later!

Tips/Suggestions:

For added protein add in eggs, egg whites, more Greek yogurt, or even increase your protein powder/liquid ratio

To reduce the fat amount use 0% Plain Greek Yogurt, eliminate the butter and increase yogurt or applesauce slightly, leave out the Andes candies.

6 inch ramekin works really well for personal sized cakes but you could get away with breaking this up into cupcakes, a bread loaf, or any other pan you have. Just watch bake time!

Some lower calorie options for decorative toppings would be 0 calorie Chocolate Syrup from Walden Farms, low calorie ice creams like Enlightened, Halo Top, or Arctic Zero, and use lite or fat free cool whip

In preparing my pan I like to spray with a non stick cooking spray then place a piece of parchment paper on the bottom to help prevent any sticking issues.

Cheesecake 3 Ways, Bday/CnC/Smores

Cheesecake is the theme today! I am such a huge fan of cheesecake. Its rich, creamy, a nice cold treat on a hot summer day, and when made like this low fat and loaded with protein! That combo is a hard one to pass on, and I know I don’t let it pass! Today I have 3 very similar variations of cheesecake that are extremely simple, and quick to make!(well at least until it hits the oven!). Don’t worry if you don’t have everything you need as I’ve provided links to almost all of the ingredients for each recipe to help make this as easy as possible!

Birthday Cake (6 servings)

Per slice – 291 Calories / 7.6g fat / 28.6 carb / 21.8 protein

Ingredients:

16 oz Fat Free Cream cheese room temp

10 Birthday Cake Oreo cookies

2 Whole Eggs

57g Muscletech Birthday Cake Protein

120g Non Fat Greek Yogurt

20g Truvia or Granulated Sugar of choice

2 oz Almond milk

1/2 tsp Vanilla extract

1/2 tsp Almond extract

1/4 tsp butter extract

Pinch of salt

Sprinkles to top, optional

Oreo Golden Birthday Cake Cookies, Limited Edition 2 Pack
Truvia Baking Blend Natural Sweetener 24 OZ(Pack Of 2)
Watkins All Natural Extract, Pure Almond, 2 Ounce (Packaging may vary)
LorAnn Oils Emulsion, Butter, 4 Ounce
Wilton Excelle Elite 6 x 2-3/4 Inch Springform Pan

Instructions:

Preheat oven to 275 degrees.

Place 7-8 Oreo in the bottom of a 6in spring form pan. Next put your cream cheese into a mixer and beat very well. Next add in your Greek yogurt, whey, and sugar, beat well then scrap down sides. Add in your egg and vanilla and mix just until incorporated. Scrap down sides and add in almond milk, mix. Finally crush one Oreo into the batter and give it a final mix in. Pour your cheesecake batter into your spring form(layered with tin foil) then if desired sprinkle sprinkles over the top. Then set cake into a water bath. Bake in the oven for roughly 1 hour or until its lost most of its giggle. Remove from oven and place on a cooling rack. Also remove the tin foil. Once cheesecake is cool, place into the fridge or freezer until fully set. I like the freezer as it works faster, and sets a bit harder. Minimum 2 hours. Slice into 6 pieces and enjoy!

Cookies n Creme (6 Servings)

Per slice – 254 Calories / 5g fat / 27.5 carb / 21.5 protein

Ingredients:

16 oz Fat Free Cream cheese room temp

11 Reduced Fat Oreo cookies

2 Whole Eggs

57g Cookies n Creme Protein

120g Non Fat Greek Yogurt

20g Truvia or Granulated Sugar of choice

2 oz Almond milk

1 tsp Vanilla extract

pinch of salt

Oreo Reduced Fat Oreo Cookie, 14.3 -Ounce Packages (Pack of 4) by Oreo

Instructions:

Preheat oven to 275 degrees.

Place 7-8 Oreo in the bottom of a 6in spring form pan. Next put your cream cheese into a mixer and beat very well. Next add in your Greek yogurt, whey, and sugar, beat well then scrap down sides. Smores Cheesecake (6 Servings)

Per Slice: 257 Calrories / 4g fat / 20g carbs / 23g protein

Ingredients:

2.25 svg of graham cracker crumb(12-13 tbsp worth)

5g Cocoa Powder

10g Brown Sugar

50g Greek Yogurt

20g Truvia or other granulated sugar

16 oz Fat Free Cream Cheese room temp

1 Whole Egg

66g NitroTech Toasted Smores

36g Marshmallow Fluff

28g Chocolate Chips(Minis would would great as well)

1 tsp Vanilla

Pinch of salt

Chocolate sauce on top – optional

MuscleTech NitroTech Whey Protein Powder, Whey Isolate and Peptides, Toasted S’mores, 2 Pound
Marshmallow Fluff – 16 oz plastic tub
Walden Farms Calorie Free Chocolate Syrup 24 oz
Honey Maid Graham Cracker Crumbs (13.5-Ounce Box)
Nestle TOLL HOUSE Semi-Sweet Chocolate Mini Morsels 12 oz. Bag

Instructions:

Preheat oven to 275 degrees.

Put the first 4 ingredients in a bowl and mix until incorporated. Place the crust into the bottom of a 6in spring form pan. You can use and size you want just will change thickness of cheesecake. Next, place Cream Cheese in mixer and beat till smooth. Scrap down the sides of your bowl and add in you sugar, greek yogurt, fluff and whey. Mix very well. Repeat scraping. Next add in your egg and vanilla and mix until incorporated. Scrap down the sides of the bowl one last time and give it a final mix. With a spatula add in your chocolate chips and mix. Finally pour your batter into spring form pan(tin foil around the pan. I like a double layer) and then set that pan into a water bath. Bake cheesecake roughly 1 hour or until most of the jiggle is out. Pop out of the oven, take out of the water bath and place on a cooling rack, also removing the tin foil. One cool enough, I like to pop it into the freezer so its sets nice and stiff. Fridge is fine, but will take longer. Let chill until completely set, minimum at least 2 hours. Slice into 6 pieces and enjoy!

Decent Macro breakdown in my opinion. 65g bar so average size. Very similar texture to a @combatcrunch bar. White coating with a pink drizzle and visible spanks throughout the bar. Very soft and chewy but has a bit of crunch from the spranks. Really good level of sweetness in this bar. Strong vanilla flavor, and it reminded me of eating a good frosting or frosted animal crackers kind of. I can’t believe I’m really enjoying a muscle tech product but I have to say this bar is probably the best birthday cake flavors bar I’ve tried, and one of the best bars I’ve had in awhile.

@muscletech cinnamon bun review

First initial smell is delicious. Smells like a cereal bar. Aesthetic look with a white frosting. Cinnamon filling, and cinnamon drizzle. Good breakdown for macros as well. Good chew with enough crunch to give some contrast. Great white chocolate coating, and a really good cinnamon flavor. It is a bit strong of a flavor but I love cinnamon so I thought it was great. Extremely happy with this bar. @muscletech killing it.

Peanut butter coating with chocolate insides. Visible crunchy crisps. Good macro split compared to @combatcrunch and similar feel. Great chew as it’s a nice blend of soft and crunchy. First get a bit of peanut butter, then chocolate, then the peanut butter comes back. Not a very sweet bar overall so I feel the flavors could of been pronounced a bit more. Feel of eating this though was much better than say a @ohyeahnutrition of @questnutrition as this had good texture feel. Not quite as good as their birthday cake flavor but still a solid bar.

Solid chocolate coating with loads of visible crunchies. Right when you bite into it you get tons of crunch and texture. Smooth chewy filling once you get last the crunchies. Filling is pretty sweet but not overpowering. Could use a bit more flavor imo. Eating this bar kind of reminded me of eating a crunch candy bar but with filling. Macros are a great split for a bar as well. Would of liked to see some chocolate chips inside the filling to fit more CCCD. Not my favorite in the line but still a decent bar.
