Wild Berry Cheesecake

Macros: per slice(makes 4)

Cals – 345

Fat – 7.3

Carbs – 42.5

Protein – 32.5

Ingredients:

(Crust)

83g Graham Cracker Crumbs

1 oz Pancake Syrup

14g Lite Butter

(Cake)

1.5 Scoops of Berry Cheesecake Protein(Muscletech’s protein is awesome)

120g Plain Greek Yogurt

2 large eggs

2 containers of Fat free cream cheese(room temp)

20g Truvia or other sweetener of choice

34g Sugar Free Preserves/Jelly –  I used Strawberry

25g Blueberries

30g Strawberries

Pinch of salt

1 tsp vanilla extract

Instructions:

Preheat your oven to 275 degrees. Wrap your 6 in spring-fold pan in tin foil.  We will be using a water bath.

In a bowl in together crust ingredients. Add more syrup if needed to mix. Place crust in your spring form. I find crust is a personal preference, so if you want a crispy crust, pre-bake it at 350 for roughly 8-12 minutes. Let cool completely before adding cheesecake

In a mixing bowl, place in your cream cheese and beat it very well. You don’t want any lumps in your cheesecake.

Next add in your sugar, protein, jelly, and yogurt. Mix well until completely combined.

Now add in your eggs one at a time and mixing just until mixed. Scrape down the sides as you go.

Finally add in your salt and vanilla and mix well until combined.

Optional – Add in fresh berries into the mixture right before you add it into your pan.

Pour your batter into your pan, and place your cake inside a pan that can hold water. Your cake should be sitting in the middle of the oven.

For a water bath, you want to start with hot water. Get some water boiling, and once it’s boiling pour roughly 1/2 in worth of water. You want enough water in the pan so it wont all bake out during cook time.

Bake your cheesecake for 60 minutes at 275 degrees. Try not to open oven door while cooking. Once time is done, slightly crack the oven door and let it sit for at least another 30 minutes.

Once the cheesecake has reached room temp, transfer to the fridge and let sit for at least 6 hours, or overnight. You can use the freezer to help it set faster.

Cut into 4 slices, top with fat free cool whip, fresh berries, and some 0 calorie strawberry/blueberry sauce for a fantastic, protein packed dessert!

Double Chocolate Banana Bread

One of my absolute favorite things to do when trying to get inspiration for new recipes is to take recipe videos that I seen shared often on Facebook by Tasty, Delish, or various other pages and trying to make a healthier twist on it. That still holds true for today’s recipe as well. Today, we are using up those pesky browning bananas that you just don’t want to peel and eat anymore. To often I’ve seen people get rid of over ripe bananas, but if you don’t know already that’s when they are best for baking! Check out how to make this moist, dense, and rich double chocolate bread.

Ingredients:

112g Lite Butter 

288g Mashed Banana

100g Truvia or granulated sugar of choice 

50g Splenda Brown Sugar 

115g Greek Yogurt 

1 Whole Egg

1 tsp Vanilla extract

1/2 tsp kosker salt

1 tsp baking soda 

35g Cocoa Powder 

1 Scoop Muscletech Chocolate Whey 

100g All Purpose Flour 

42g Chocolate Chips

Instructions:

Preheat oven to 340 degrees. 

Spray and prepare a bread tin. I placed a sheet of parchment in the bottom. 

1. In a bowl place in your butter and sugars. Beat until combined. 

2. Next place in your egg, yogurt, vanilla, and banana in the bowl and combine. 

3. Now add in your flour, cocoa, salt, whey, and baking soda. Mix evenly, making sure all of your cocoa is distributed. 

4. Now pour your batter into your prepared bread pan. Pour your chocolate chips evenly over the top of the batter then place pan into the oven. 

5. Bake for roughly 40-50 minutes, checking periodically. Once the jiggle is out of the bread your done. Use the toothpick test to double check if done. 

6. Take the loaf out of the oven and place on a cooling rack for at least 20 minutes to cool. 

7. Once cool remove from bread pan and either allow to finish cooling or slice and eat! 

You can get really creative with this bread. I’ve given you a fantastic base for playing with flavors! You could add fruits, nuts, peanut butter, any flavor chips you want to use, or anything else you can think of! I preferred putting this loaf in the fridge for awhile so the flavors set and it got cold.

Blueberry Oat Bake

Just look at that beauty. Feast your eyes on the next treat you’re about to make for yourself. You might make with the intentions of sharing, but once you bite into this soft, fluffy, moist, delicious bar your not going to want to share. Eat it warm, cold, plain, or spice it up with toppings anyway is a good way as long as your eating it!

I thought some fat free cool whip, fresh blueberries, and some cinnamon @epicspreads would be a great combo! 

Macros: Per 9 Slices

Calories – 150

Fat – 5.8g

Carbs – 15.6g

Protein – 7.8g

Ingredients:

80g Oat Flour(ground up oatmeal)

44g or 1 scoop of Whey(I used MT Cinnamon)

100g Truvia or granulated sugar of choice

1/4 tsp Xanthan Gum(Optional. I added to experiment but not sure it made much difference.)

21g Lite butter 

28g Coconut Oil (melted)

115g 0% Plain Greek Yogurt

1 whole egg whipped

4 oz Low fat milk or milk of choice

46g Liquid egg whites

1 tsp vanilla extract 

1/4 tsp salt 

1 tsp cinnamon (optional)

75g Fresh Blueberries

Instructions:

(Preheat oven to 350 degrees)

(Prep steps: Whisk Eggs, Grind oats into flour, spay a 8×8 pan with non stick spray, use parchment paper if you would like, melt butter, melt coconut oil.) 

1. Add all of your dry mix together in a medium bowl and combine well. Feel free to add in your blueberries as well and gently cover them in your dry mix.

2. In a separate bowl add in all of your your wet mix.  Whisk everything together until combined. 

3. Proceed to add your dry mix into your wet, folding with a spatula gently well you do. Careful not to mash your blueberries. 

4. Place into prepared 8×8 pan and bake in the middle of the oven for roughly 25-30 minutes. Use the toothpick test to check if done to be sure.

5. Once baked, remove from oven and place on cooling rack for at least 15 minutes. After 15 minutes feel free to slice and eat!

Serving

I topped mine with fat free cool whip, fresh blueberries, and @epicspreads cinnamon peanut butter. This bake would also be fantastic with a bit of honey and a dash more of cinnamon paired with a hot cup of coffee for breakfast, a nice snack, or for dessert with a scoop of ice cream! GNC Lemon Meringue Lean Bar

I think GNC definitely had summer flavors in mind when creating this guy. Lemon is a perfect flavor choice in the warm months as it’s usually lite, refreshing, and delicious. Read below to see if GNC was able to get it right!

Decent macro split here with this bar. Protein could be a bit higher but as long as it’s at least 15 I’m usually happy. Very nice lemon smell to this bar, and has a almost fluorescent yellow rice crispy looking bar with a vanilla dipped bottom. Pretty solid lemon flavor here without being to overpowering. You don’t really get any meringue with this bar unfortunately. Really wasn’t sure how they were going to pull that off. It consistency is very similar to a rice crispy or a cereal bar with just a slight dry grainy finish. Every with that said it’s still an enjoyable eat, and if I remember correctly they have a decent price point.
Overall – 6.5/10

Arctic Zero(New Flavors)

@arcticzero Rocky Road Trip , another new release from the people over at AZ. Thanks again for letting me give it a go. .

300 cals for this pint. Chocolate base with mini marshmallows and roasted almonds. This pint definitely doesn’t lack mix’in’s. Loads of mallows and almonds in pretty much every bite, specially almonds. I would say my biggest point to work on for this flavor would be just kicking up the chocolate base flavor a bit more. I definitely like the PB flavor over this, but that’s personal preference as I’m not a huge nut in my food guy. .

Peanut Butter Swirl

Vanilla base with swirls of Peanut butter throughout. It does have a similar taste to a PB2 taste, which is to be expected. Also, It’s got some white chips adding in for a bit of a crunch, and honestly I get a bit of a sea Salt taste at the end as well. If you let it sit out for awhile,it gets pretty soft and smooth.
For 300 calories a pint this is definitely something to grab. High up on my list of flavors

@arcticzero Cherry Chocolate Chunk –
Another pint, another 300 cals. I was very impressed with this flavor. Cherry vanilla base with chunks of chocolate and cherry scattered throughout the pint. Gives you a nice chocolate covered cherry feel without the base being to overpowering of a cherry flavor. Worth mentioning that I don’t like cherry that much yet this was quite good. This one also softened up amazing. If you are a cherry fan then this one is definitely up your alley. .

Orange Cranberry Muffins With Cream Cheese Frosting

With spring right around the corner I am feeling ready bring in and welcome some lighter flavors. With warmer temps it typically bring in a wide variety of various fruits, vanillas, and other lighter flavor combinations. I had a load of fresh oranges which ended up being today’s inspiration. Working with fresh compared to artificial is almost always better.Got into the kitchen and  whipped up these delicious Orange Cranberry muffins with a cream cheese frosting and toasted walnuts.

Macros per muffin : (makes 8) 

  • Cals – 144 cal 
  • Fat – 2.5g
  • Carbs – 25g
  • Protein 8.5g

Ingredients: 

Dry Mix :

  • -100g All purpose Flour
  • -20g Vanilla Protein
  • -50g Truvia
  • -3/4tsp Baking powder
  • -1/4tsp Baking soda
  • -1/4tsp Salt 

Wet Mix:

  • -1 whole Egg
  • -122g unsweetened applesauce
  • -3oz fresh OJ
  • -1/2tsp orange rind
  • -14g Canola Oil

Frosting:

  • -5oz FF cream cheese softened
  • -20g vanilla whey
  • -4g truvia
  • -1/2tsp vanilla
  • -3G OJ
  • -1/4tsp orange rind.

Instructions:

  1. Preheat oven to 375 degrees
  2. Sift Dry ingredients together in a medium sized bowl to help ensure even distribution. Set aside
  3. In a medium bowl whisk the egg until combined. Then add in the rest of your wet ingredients and whisk until mixed.
  4. Slowly pour your dry mix into your wet and mix until just combined. 
  5. Place in 20g Cranberries or mix ins of choice and fold in. 
  6. Place batter evenly into a prepared muffin tin. You can either spray with non stick spray or use muffin liners. Either or will work here.
  7. Place in the middle of your oven and bake for roughly 14 minutes. 
  8. Check if done, once toothpick comes out clean remove from the oven and place on a cooling rack. Leave in the tin to cool for 10 minutes then remove and place back on the rack.
  9. Well muffins are cooling, place all of your frosting ingredients into a medium bowl and mix well. 
  10. Now here is where you can do two things. Either just spread frosting on your muffins, or grab out a piping bag and get a little creative with your decorations!
  11. Additional toppings could include toast nuts, orange zest, dried or fresh fruit, and powdered sugar are just a few!
