First off this smells amazing. Like a Rice Krispie with just a hint of peanut butter. Breaking it in half was unexpected when it easily broke apart just like a Rice Krispie. Good bit of crunch with this bar. You get a bit of a marshmallow taste off the bat then more pb as you chew. I definitely would of loved to either see the pb play a bigger role since it’s a pb focused bar, or get more from the marshmallow. The addition of small nuts throughout the bar was nice and worth mentioning. Finished just a bit dry and grainy, but not terrible.
I would eat this again.
7.8/10 I couldn’t decide between 7.5 or 8.

Very strong toffee aroma. White marshmallow Rice Krispie style bar with pieces of pretzel in it and a white drizzle. Very soft when breaking in half. Overall pretty lacking on flavor. You get a hint of toffee when you first bite into it most the flavor falls into the back drop. If you get a bite with pretzel in it the salty crunch adds a bit to the bar, but overall base flavor is weak. The bar also finishes just slightly grainy.
Overall not terrible but wouldn’t buy again.

First off worth mentioning the strong Chocolate flavor this bar gives off. Nice on the nose. Chocolate rice crispy bar essentially,drizzled in chocolate, then dipped the bottom in it as well. Average size bar and macros to go with it. Good bit of crunch with this bar and has a good chew to accompany it. Chocolate flavor is average here. It’s not super strong, but you know your eating a chocolate flavored protein bar. Bar also finished very dry in your mouth so make sure you have some water or something to wash it down. .

6.5/10 .

Pumpkin is it’s own season am I right? Just because fall is over doesn’t mean you need to leave pumpkin behind. It’s an excellent flavor to mix with cinnamon, chocolate, caramel, or stand alone by itself! Here, I use it to add that extra bit of special to this cheesecake. Rich, dense, and absolutely delicious. This makes for a perfect macro cap, healthy dessert option, or with the macro nutrient split you could even use this as a pre or post workout snack! Who doesn’t want cheesecake gains!? I hope you enjoy! Now, let’s get baking! 

Macros per slice(8): (with crust)

  • Cals – 229
  • Fat – 7g
  • Carbs – 26.6g
  • Protein – 14g

Ingredients:

  • 2 8oz packs FF Cream cheese room temp
  • 1 8 oz light cream cheese room temp
  • 4 eggs room temp
  • 100g truvia
  • 50g @muscletech vanilla whey
  • 175g Greek Yogurt
  • 1 can or 420g pumpkin purée
  • 1tbsp cinnamon
  • 1/2tsp nutmeg
  • 1/2tsp salt
  • 1 tsp Vanilla extract

Instructions: 

  1. Preheat oven to 330 degrees 
  2. Beat cream cheese till smooth
  3. Add in your eggs, one at a time until mixed.
  4. Next, add in your pumkin and mix well. 
  5. Proceed to add in the rest of your ingredients, one at a time mixing as you go. 
  6. Mix till just incorporated. 
  7. Pour into a sprayed spring form pan. Tap on the counter a few times to get rid of excess air pockets. 
  8. Bake for roughly 50-60 minutes until cheesecake is set, and has just a small wiggle in it. 
  9. Remove from oven and place on a cooling rack for at least 1 hour. 
  10. Place cheesecake in the fridge to finish setting.
    Optional Crust – I wasnt extremely happy with this crust, yet the cheesecake turned out fantastic, so I would say save the extra cals and make it crust less! 
    -Crust:
    150g Cinnamon Frosted Flakes, 1oz @waldenfarmsinternational maple, 50g lite butter.
    Smash cereal, combine with melted butter/syrup. Line a prepared baking dish and bake at 350 for 8-10 min. Then pour your cheesecake on top. Then follow from Step 8 on.

One Bowl Chocolate Toffee Oat Muffins w/ Caramel

I bet when you read toffee, you sat there thinking “really, toffee bro. I don’t have that.” Well, I’m here to tell you to get your hands on some.Get toffee here I really feel toffee is an extremely underrated flavor in the baking world. I know it’s a bit more common overseas, but you rarely find it here in the U.S. I find it to be a very versatile flavoring to work with. Mixes well with chocolates, caramel, and banana just to name a few. If you follow the blog then you know I am a fan of muffins, and use oats in them quite often. A few reasons why I enjoy oat muffins are 1. They are easy to grab, carry, and eat. 2. You can squeeze in all sorts of goodies in muffins like fruits,healthy fats, and good carb sources(oats) 3. They are typically easier to make in the baking world.  Great for beginner bakers, which I find a lot of my readers are!

The muffins today embody lots of good flavors everyone loves like caramel and chocolate, throws in a potentially unfamiliar flavor guest toffee , supports you with good fuel, and packs some protein. Let’s check out the details.

Macros: (Makes 8-10) *Macros are for 8*

  • Calories – 164
  • Fat – 5.7g
  • Carbs – 21.9
  • Protein – 7g

Ingredients – 

  • 2 Whole Eggs 
  • 14g Canola Oil *can sub for preferred oil*
  • 4 oz Unsweetened Almond Milk
  • 122g Unsweetened Applesauce
  • 50g Truvia *or preferred granulated sugar*
  • 1 Chocolate Nitro Tech Whey *or preferred whey*
  • 5g Unsweetened Cocoa Powder
  • 11g SF FF Chocolate Pudding Mix
  • 100g Old Fashion Oats
  • 30g Hersey’s Toffee Bits
  • 1/2 tsp salt
  • 1 1/2 tsp Baking Powder
  • 38g Smuckers Sugar Free Caramel *or preferred topping sauce*  

Instructions – 

  • Grab a large bowl and crack in your eggs. Using a whisk, combine eggs.
  • Proceed to then add in the rest of your wet ingredients, whisking after each one to ensure everything gets incorporated.
  • Next, add in your dry mix, again one ingredient at a time ensuring everything gets incorporated. *You can use a sifter for your cocoa to help dissolve before adding if you could like.
  • Once all ingredients are added and incorporated, place your bowl in the fridge for at least 30 minutes to allow oats to soak up some liquid. Batter will get thicker.
  • Once your almost ready to pull out of the fridge, preheat your oven to 350 degrees and spray your muffin pan with non stick spray.
  • Using a spoon(I used a small ladle) pour batter evenly into prepared muffin pan. 
  • Bake on the middle rack for roughly 12-15 minutes. *Cooking times may vary*
  • Use the toothpick test to check if done, then take out of the oven and set pans on cooling rack. 
  • After a few minutes I used a frosting spatula to slowly take each muffin out, ensuring I don’t rush and break it well taking it out. Place back on cooling rack to finish cooling. 
  • One cool, take caramel sauce of choice and drizzle over the top of your muffins. 
  • Lastly, pick it up and stuff in your face. 
  • Oh, and enjoy the fruits of your labor!

Nick reached out to me and asked me to try his new brownie he is working on. Small start up in 10/16. First of, macros for me are hard to work with but for someone that does keto would fit it in I’m sure. I tried it cold at first it has a nice chew to it, but doesn’t really have any flavor to it then leaves a slightly bad aftertaste. Warming it up didn’t help much either. Simple ingredients and the sharp bitterness definitely is coming from the cacao chips I’m pretty sure. Definitely try to support small business, so give the man a follow but overall product needs more. . Keeping it real as always. .
2/10 .

With spring right around the corner I am feeling ready bring in and welcome some lighter flavors. With warmer temps it typically bring in a wide variety of various fruits, vanillas, and other lighter flavor combinations. I had a load of fresh oranges which ended up being today’s inspiration. Working with fresh compared to artificial is almost always better.Got into the kitchen and  whipped up these delicious Orange Cranberry muffins with a cream cheese frosting and toasted walnuts.

Macros per muffin : (makes 8) 

  • Cals – 144 cal 
  • Fat – 2.5g
  • Carbs – 25g
  • Protein 8.5g

Ingredients: 

Dry Mix :

  • -100g All purpose Flour
  • -20g Vanilla Protein
  • -50g Truvia
  • -3/4tsp Baking powder
  • -1/4tsp Baking soda
  • -1/4tsp Salt 

Wet Mix:

  • -1 whole Egg
  • -122g unsweetened applesauce
  • -3oz fresh OJ
  • -1/2tsp orange rind
  • -14g Canola Oil

Frosting:

  • -5oz FF cream cheese softened
  • -20g vanilla whey
  • -4g truvia
  • -1/2tsp vanilla
  • -3G OJ
  • -1/4tsp orange rind.

Instructions:

  1. Preheat oven to 375 degrees
  2. Sift Dry ingredients together in a medium sized bowl to help ensure even distribution. Set aside
  3. In a medium bowl whisk the egg until combined. Then add in the rest of your wet ingredients and whisk until mixed.
  4. Slowly pour your dry mix into your wet and mix until just combined. 
  5. Place in 20g Cranberries or mix ins of choice and fold in. 
  6. Place batter evenly into a prepared muffin tin. You can either spray with non stick spray or use muffin liners. Either or will work here.
  7. Place in the middle of your oven and bake for roughly 14 minutes. 
  8. Check if done, once toothpick comes out clean remove from the oven and place on a cooling rack. Leave in the tin to cool for 10 minutes then remove and place back on the rack.
  9. Well muffins are cooling, place all of your frosting ingredients into a medium bowl and mix well. 
  10. Now here is where you can do two things. Either just spread frosting on your muffins, or grab out a piping bag and get a little creative with your decorations!
  11. Additional toppings could include toast nuts, orange zest, dried or fresh fruit, and powdered sugar are just a few!

Iced coffee Protein – Tad sweet but tolerable. Mixability was good. No noticeable chucks or gummed whey. Flavor was actually pretty close to drinking an ice coffee. I’m not a huge fan of ice coffee so you might really enjoy this. .

Iced Mocha- flavor just wasn’t there for me on this one. Very bland and unappealing. Mixability and getting a coffee feel were good, as well as macros but definitely wouldn’t see myself buying this one. .
Powdered PB – very comparable to its competitors(pb2, etc) as far as macros, grams per svg, etc. Mixability is fine, and flavor is good for being powdered pb. Ate it on rice cakes, and on cake. .

Overall, if your are a die hard ice coffee fan, definitely scoop up that flavor as I think you’ll love it.

Macros with Peanut Butter: 

  • Calories – 240
  • Fat – 10.6g
  • Carbs – 38g
  • Protein – 14g
  • Fiber – 22.3g

Macros w/out Peanut Butter:

  • Calories – 150
  • Fat – 3g
  • Carbs – 33.8g
  • Protein – 11g
  • Fiber – 21.3g

Ingredients: 

  • 20g Vitafiber 
  • 10g Whey 
  • 3g Almond Flour 
  • 14g Epic Spreads (optional) 
  • 6g Truvia (optional)
  • 1/8th Baking powder 
  • 14g Chocolate Chips 
  • Splash of milk if needed

Instructions: 

Mix your vita fiber and peanut butter together. If your peanut butter is still you can warm it up to help mix better. **You can Sub out peanut butter in the recipe and it still will work. You will need the milk to help mix. 

In a separate bowl mix together dry ingredients together until combined. You are looking for a consistency that you can pick up with your hands.

Now here you can do 1 of two things, or hell do them both I wont judge =]. Take your chocolate chips and put some inside your ‘batter’ or just place them all on top once you place it on a prepared baking pan. I use a silicone baking sheet and they work WONDERS! Way better than using non stick spray or parchment paper in my opinion. 

Bake in the oven for roughly 8 minutes at 350 degrees. Now where you place your cooking in the oven is important. The lower in the oven you bake the cookie will speed up the cooking process, and caramelize the bottom quicker. 

Once cooked(look for golden brown color), pull out and set pan on a cooling rack. It cools quick, so after a few minutes you should be able to grab the cookie right off the pan and enjoy!
