Chocolate Chip Cranberry Banana Bread

img_0707

I love bananas. I would say I don’t go many days without one. Good quick carbs, low fat, great tasting, and they go so well in baked goods. I know many people that throw bananas away once they turn brown, but not me. I freeze them so I have them for a rainy day(in this case, snowy day). Bananas in cooking can help replace fat source, and even a flour in some products(like pancakes). They also will help a natural sweetener to the product. This bread is a great mix between rich banana flavor, moist chewy bread, and wraps up with a fruity chocolate finish. Serve bread cold, or slice and toast to serve warm. Its fantastic paired with your favorite peanut butter and fresh cup of coffee.

So, grab those brown bananas and lets get baking!

Makes 12 servings.

Servings are optional depending on how you would like to cut it up, and depending on how you bake it. Want to make individual portions? Pop the batter into lined muffin tins for single serve banana bread muffins.

Notes:

Macros will vary depending on type of protein powder, sugars, or other toppings you use. Some substitutions you might be able to make, applesauce for Greek yogurt, whole eggs for flax eggs or egg whites,  and coconut flour for almond flour.

Wet ingredients:

  • 190g mashed banana or two whole bananas
  • 2 whole eggs whisked
  • 150g Plain 0% Greek Yogurt
  • 1 Tsp Vanilla extract
  • 1/4 tsp Banana Extract

Dry Ingredients:

  • 28g @muscletech cinnamon protein
  • 30g All Purpose Flour
  • 42g @almondpro (almond flour)
  • 50g Truvia(or other sugar source)
  • 1 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/8th tsp Nutmeg
  • 1/4 tsp salt
  • 20g Dried Fruit of choice
  • 30g Chocolate chips of choice

Instructions:

  1. Preheat oven to 350 degrees
  2. Add all your wet ingredients together, and combine well.
  3.  Sift your dry together, then add to your wet well mixing. Leaving out half of your chips and Cherries to top the loaf. Mix until combined.
  4.  Poor batter into prepared Bread loafs (I used two small ones) and bake in the oven for 25-35min.
  5. Once done, remove and set on cooking rack. After 5-10min take out of pan and return to rack to prevent carryover cooking.
  6. Once cool cut into 12 equal slices and enjoy!

There you have it! It’s that simple!!! Absolutely amazing flavor, moist, rich, and most importantly macro friendly! This bread should be kept cold as it has dairy involved in creating the recipe.

@questnutrition Rocky Road Bar Review

210 cal / 9f / 20c / 20p
Decent chocolate aroma right away, visible chunks and nuts scattered throughout. The bar itself I felt to be a bit dry, and have a slight after taste to it. The white chocolate pieces were nice, but rocky road is marshmallow not white chocolate so that didn’t fit for me. Good chew overall, and enough chunks to give it some texture appeal. Slightly grainy as seems typical with most quest stuff these days. Overall I wasn’t to wowed with this bar. Another average bar for me, plus it’s another higher fat bar which turns me off.

Chocolate – 110cal / 4.5f / 17c / 12p

Good visual here. Chocolate bar that looks like one of the cereal bars you’d buy from a gas station with good amount of icing over it. Decent macros for the bars size. Not to crunchy, not to soft. Wasn’t super strong chocolate flavor honesty. I taste more of the icing than I do chocolate. The longer you chew this the more you taste protein as it gets kinda grainy or dry at the end.

Cinnamon Roll – 110cal / 4.5f / 17c / 12p
Good visual off the bar. Looks like a cereal bad with a nice bit of icing drizzled over it. Decent macros for the size of the bar. 38g which is just over half the weight of a quest bar. Very underwhelming cinnamon flavor here. Icing wasn’t as strong as the chocolate either. Decent to eat, but nothing spectacular.

@questnutrition Waffle Cereal Bar review –

110 cals / 4.5 fat / 17 carb / 12 protein

First off this has an amazing syrup smell. Yummm. Tan cereal bar with a white icing coating about 75% of the top of the bar. 38g bar so it’s just over half the weight of a typical quest bar. Very chewy bar that gives you a nice syrup with a bit of waffle or pancake flavor. It does fade out the more you chew and ends kinda bland but it isn’t terrible. Overall the flavor is a nice change but it needs to be increased a bit and increase flavors other than syrup. Definitely would of called this Bar Syrup with a hint of waffles.

Overall
